
On June 27, the Airports Council International – North America, a trade organization representing commercial airports in the United States and Canada, unveiled the winners of the 2025 ACI-NA Excellence in Airport Concessions Awards.
Claiming the 2025 Best New Food and Beverage award: Oven and Shaker.
“This really came out of nowhere, and I’m really proud of the work that we’re doing, and more pointedly, the ongoing intense efforts our airport partners continue to pursue in creating and managing such a unique place of nourishment and refreshment at PDX,” Oven and Shaker Bar Partner Ryan Magarian told KOIN 6 News, describing the concession awards as the “Oscars for airports.”
“Portland’s not getting a whole bunch of wins these days, so I hope even a small trophy like this continues to add to the hope and pride we all have for our community,” Magarian added.
Oven and Shaker was named among 20 new shops and restaurants joining PDX in 2024-2025 after the airport’s remodel.
Oven and Shaker’s PDX location offers breakfast items including avocado bruschetta and brioche French toast, along with their specialty pizzas and sandwiches and craft cocktails.
“Inspired by six-time James Beard nominated Chef (Cathy Whims’) many trips to Italy, the kitchen at Oven and Shaker unites tradition and creativity in the arena of wood-fired Neapolitan pizza and Italian street food. Adhering to Whims’ legendary passion for detail, we use only the freshest available local ingredients, dough made in-house using our signature 100-year-old sourdough starter, and hand-toss and fire each pizza to order in our imported Milanese wood-burning oven (brought over from Italy brick for brick),” Oven and Shaker’s website says.
The restaurant also has locations in Portland’s Pearl District and Lake Oswego.
