The owner/chef of Oakland’s tofu restaurant Joodooboo, Steve Joo, was one of nine chefs selected for the best in the nation.
Dooboo translates to tofu in Korean. The eatery says their dooboo is “made with domestic organic soybeans and is inspired by traditional Korean methods of using reconstituted seawater as a coagulant.”
The cuisine is Californian, but Korean-inspired, per Joodooboo’s website. It is called a BanChan shop, which translates to “side dishes.”
“Steve Joo has quietly cultivated something profound: a small, cheerful banchan shop that hums with intentionality, playfulness, and a deep respect for ingredients,” said Food & Wine.
Joodooboo is located at 4201 Market St. in Oakland.
