The testing program has set a new national standard for seafood festivals, which validate that attendees are served fresh, genuine Gulf shrimp, according to SeaD Consulting.
The testing of the authenticity of shrimp marks a broader trend across the South as festivals are holding themselves accountable to the standards they advertise.
