Food Truck Friday: This weekend’s must try barbeque spot

SHREVEPORT, La.  (KTAL/KMSS) – It’ll be a while before the smoke clears, as Louisiana Smoke House rolled up this morning to reopen their food truck.

The family owned truck has become a crowd favorite , serving up its southern mix of Louisiana and Texas style barbeque, which has earned its stripes across the Ark-La-Tex.

Truck owner Marcus Williams says people “chase him down” for his ribs, but anything that comes off the smoker seems to be a fan favorite.

“I love smoking meat,” said Williams. “We grew up cooking meat over charcoal. We don’t use lighter fluid, pecan wood only. I’ll get those pits fired up at 4 or 5 am in the morning and let that smoke roll.”

Williams takes a lot of pride in his craft and work. From the quality of the trucks food, to the advertising on his social media pages. But he says it is not always easy and you have to truly have a passion.

“It’s extremely difficult. I haven’t been asleep since we closed yesterday. But it’s fun, the people make it fun. You have to have a passion for it. My mom just loves cooking, I just love cooking. The money will follow that. As long as you put the love in it first and God first.

It’s the hardest thing I’ve ever done in my life but it’s also the most rewarding thing.”

Williams acknowledges his mother for his passion and rise in the food industry while she also plays a big roll in the business as well.

Whether it’s ribs, brisket, chicken or Ms. Matties Cakes, the menu is almost endless. The truck is open from 11 am to 3 pm at the location of 5108 Jewella Ave in Shreveport, La.
