REXBURG — Sparks Barbecue has only been open for six months, but the new eatery is electrifying taste buds with its variety of moist meats, delicious sides and hearty portions.

The restaurant opened in October in the old JB’s building on Main Street by Broulim’s. Chris Sparks and his business partners completely remodeled the building to give customers a comfortable place to eat their meals.

If you love meat, Sparks has you covered with sweet barbecue or savory ribs, turkey, pulled pork, tri-tip and brisket that is smoked daily for 12 hours. The turkey was amazing – moist, seasoned and packed full of flavor.

Sparks also offers jalapeño cheddar sausage, which consists of ground brisket, tri-trip, spices and cheese. If you prefer a non-spicy version, you can get it without jalapeños.

Some of the most popular items at Sparks are the nachos and smoked baked potatoes. The potato is put in a smoker and covered with cheddar cheese, queso, pulled pork (or your meat of choice), sour cream, sweet Barbecue sauce and green onion.

You can choose your favorite meat on the nachos and it’s a great dish to share with a friend.

Sparks prides itself on its homemade macaroni and cheese and you must true the cornbread. It’s more like a cake – not crumbly but moist and rich. And the honey butter? Amazing.

Sparks Barbecue is open Monday through Saturday from 11 a.m. – 9 p.m. Learn more about the restaurant and see their complete menu on Facebook and Instagram.
